Simple Almond Butter Cookies
These simple and nutritious Almond Butter cookies are easy to make, full of good fats, and pair well with a glass of milk or your favorite non-dairy beverage. As an added bonus they can be made dairy free and gluten-free.
Combine all ingredients, dry then wet, and mix. Shape dough into small 1.5 inch balls with a tablespoon and push off spoon onto greased cookie sheet or parchment paper. Using a spoon and fork prevents the sticky dough from sticking to your hands as your transfer dough to cookie sheet. Then use the fork to press down cookie and flatten it a little bit with a criss-cross design to make it look more like a cookie instead of a ball. Dipping the fork in water between criss-crosses will prevent the fork from sticking to the dough.
Bake for 12 to 15 minutes at 350 degrees or until edges start to turn darker brown.
Ingredients:
3/4 cup Almond Butter (or similar nut butter)
1 Egg
1 Tbsp Chia Seeds
1 small container apple sauce (approx. 6 oz)
2 tbsp brown sugar
Pinch of salt
3 Tbsp Almond Flour
3 Tbsp Coconut Flour
Optional Add Ins Include: Chocolate Chips, Whey Protein, Cinnamon, Raisins
