Simple, Delicious, and Kid Approved. I even got requests for seconds on this one. The best part is that it is simple to make, takes very little time to prepare and tastes amazing! It only takes about 30 minutes to make. 

I would highly recommend substituting the chicken for shrimp, or pork as well. All sorts of ingredients here to boost immunity, taste good, increase fiber intake, add lean protein, taste good, sneak in vegetables, taste good and make people ask for seconds. All in one pot to clean so you can have time to play a board game afterwards. 

It is simple, here’s what you need: 

2 Chicken breasts

4 .5 Cups of water or Chicken Broth

4 Cups of long grain brown rice (rinsed)

1/2 Bag to full bag or frozen Swiss chard or spinach

A Few pieces of saffron

A Pinch of turmeric

A Pinch of salt

A Pinch of pepper

1/2 Minced onion 

1 Clove of minced garlic

It is simple, here’s what you do: 

Put the broth in the instant pot

put the rice in the instant pot

Cut up the chicken into little cubes about 1/2-1 inch in size

Add spices

Give a quick stir

High Pressure cook 15 minutes, natural release for 10. Boom.
