This simple recipe was kid tested and securely approved by a 3 year old a 5 year old and two 40 somethings… so far. Please rate and review at your own cooking convenience. It is a simple way to make a healthier cookie loaded with good stuff. These freeze well and also travel well on hikes or road trips while making a good snack any time. They are soft and have a great texture to make you feel like you are eating something healthy and hearty.

Preheat the oven to 350 degrees.

Mix all dry ingredients and then add wet ingredients and bake for 20-25 minutes…. please keep in mind this recipe is baked with love at Healthy ALTITUDES. so this is a high altitude recipe. You might need to modify. It will make a good doughy consistency and then you can use an ice cream scoop to place little balls on a non stick cooking sheet. Press down on the balls with a fork to flatten them slightly before cooking.

At about 20 minutes check to make sure bottom of cookies are turning light brown and then when they do, remove them and place them on a cooling rack.

The easiest thing. It only requires 12 simple ingredients in your pantry. It will make about 36 cookies. Just enough to share and to take on the go.

Dry Ingredients

  • 2 cups cooked cooled quinoa
  • 1.5 cups quick oats
  • 2 tbsp chia seeds
  • 1/2 cup chocolate chips
  • 1 cup coconut flakes
  • 1 tbsp cinnamon
  • 1 tsp kosher salt
  • 2 tsp baking powder

Wet Ingredients:

  • 3 mushy bananas
  • 2 tbsp coconut oil (melted)
  • 1.5 tsp vanilla
  • 1.5 tbsp softened butter
  • 2 tbsp honey
