Amazing Oatmeal Cookies
These oatmeal cookies are truly amazing. They have the perfect sweet flavor and chewy texture. And better yet, the cookies are loaded with fiber to keep your gut healthy and protein to keep your stomach full.

Cookies were invented back in the 1800’s. It all started when a baker put a dollop of whatever they were making on the baking sheet to see if it was warm enough to bake bread on. If the dough placed on the sheet cooked, the oven was the right temperature to bake bread.

Enter stage right… Amazing Oatmeal Cookies.

Amazing Oatmeal Cookies
TOTAL TIME: 20 min Prep: 8 min Cook: 12 min
Ingredients
2 cups instant oats
2/3 cup flour
3 Tbsp chia seeds
1/2 tsp nutmeg
1/2 tsp baking soda
1/2 tsp baking powder
2 tsp cinnamon
1/4 tsp salt
3 tbsp almond butter
3 tbsp butter, melted
1 cup raisins (plump in microwave, soak
in water for 30 sec, and drain water)
2 tsp vanilla
2 eggs

Directions
- Preheat oven to 350ºF. Prepare a baking sheet by placing a piece of parchment paper on top.
- Mix dry ingredients in a large bowl.
- Whisk together almond butter, melted butter, and additional wet ingredients in a medium bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined. It will make a pretty gooey, doughy ball.
- Use a tablespoon to place little balls, about the size of a golf ball, on the prepared baking sheet. Gently push each ball down to make them a little flatter – they won’t spread too much when cooking. Bake for 12 minutes, until slightly golden brown on top.
